This is only a short post – I have just made such a yummy dinner that I have to share it with you all!
Slimming World: 2 syns per portion
Ingredients: Two chicken breasts, two eggs, three rashers of bacon, rice, broccoli, paprika, chilli powder, chilli flakes, garlic puree, tomato puree, one garlic clove, half an onion
1. I chopped up two chicken breasts into bite sized pieces and placed them into a baking dish. I added two teaspoons of olive oil, paprika, chilli powder, chilli flakes, garlic puree, tomato puree and a dash of water. I mixed everything together, covered with kitchen foil and left to marinate for half an hour.
2. I placed the chicken dish into the oven and left to cook for around 20 minutes at 190°c.
3. I put some rice on to boil, and in the mean time I finely chopped half an onion and two cloves of garlic and cut up three rashers of bacon. I fried these in a sauce pan with two eggs, some salt and pepper and added the rice once it was fully cooked and drained.
4. I steamed the broccoli and served it up with the rice and chicken.
