I have most definitely over indulged over the festive period, as I’m sure most of you have! I feel out of shape, my jeans won’t do up and my body is desperate for me to eat some healthier food.
I really hate the word ‘diet’ and the whole concept of being limited to how much I can eat.
This is why I like the Slimming World plan so much. It has such a wide selection of foods that you can eat unlimited amounts of – pasta, meat, fish, potatoes, vegetables, fruit, as well as ‘syns’ which allow you to have a small amount of treats every day.
Slimming World has given me a whole different understanding on food. I used to think that if I wanted to loose weight then I would have to be starving myself which definitely never works for me as by the end of the day I’m so hungry that I eat everything in it. I now know that if I stick to the right foods in the plan, I can loose weight, feel healthier and never be hungry. Within a few of weeks I am able to loose the extra pounds that I find myself gaining at times.
The only slight negative that I have about the whole Slimming World plan is that you do need to spend time planning, preparing and cooking meals, which does take a little bit of time to adjust to.
That is why this meal is one of my favourites:
It is quick, simple and so so so delicious! Everything on here is completely free on the Slimming World extra easy plan.
Preheat the oven to 200°C (fan).
Then cut up thin slices of butternut squash. This can be a bit fiddly and you do need a decent knife to get through it! Alternatively, there is the option of buying butternut squash slices that have already been cut up.
Place the slices on a baking tray and spray with Frylight and generous pinch of salt and pepper on each slice. Place in the oven for around 15 – 20 minutes.
While this is cooking, prepare a simple salad. This fat free vinegarette is a delicious addition and also free on the Slimming World plan.
Voila! Quick, delicious and healthy.
